International Taco Day - who would have ever thunk it! There really is a day for everything, huh?
Anyways, in honour of the day, I thought I would share with you this quick and easy recipe I found on Family Fun. Look:

Tasty Chicken Tacos
Ingredients
1 tablespoon vegetable oil
1/2 cup minced onion
2 garlic cloves, minced
1 serrano chili, minced
1/2 cup tomato sauce
1 teaspoon cumin
1/2 teaspoon salt
3 1/2 cups shredded, cooked chicken
12 flour tortillas

Method:
- Heat the oil in a large skillet over medium heat. Add the onion, garlic, and chili and sauté until the onion has softened, about 6 minutes.
- Add the tomato sauce, cumin, and salt and continue to cook for one more minute. Add the chicken and cook until heated through, about 2 minutes.
- Taste, and adjust the seasoning if necessary. Serve in tortillas with toppings of your choice. Makes about 3 1/2 cups.
Note: You can replace the minced onion, garlic powder and chilli with powdered versions if you have picky eaters that require such items to be hidden ;-)
How the kids can help: Measure and pour ingredients, assemble tacos - nice one to allow them to get their hands into it ;-)
