Tasty Tuesday - Easy-Bake Oven Oatcakes

I looooove the Easy-Bake oven! I always have. We made this recipe on the weekend, though we made it as little oatcakes instead of cookies. They were really good, and reminded us all of a Scottish Oatcake recipe my Mom makes. Directions as we made the cakes follow, for the original recipe, click here.

Easy-Bake Oven Oatcakes (from: Easy Bake Oven Mixes - #23 Oatmeal Cookie Mix - method modified)


1/4 c brown sugar
1/4 c margarine
1/4 c whole wheat flour
1/4 tsp baking soda
1/2 c. quick cooking oats

Heat up Easy Bake for 15 minutes while preparing the following:

Cream together sugar and margarine. Mix dry ingredients together and add to sugar mixture. If mixture seems dry, add a pat of margarine as needed.

Press ~1/4 c of prepared mixture into un-greased Easy Bake 4" round cake pan. Sprinkle with some small slivered almonds if desired. Bake in Easy Bake oven for ~ 15 minutes until golden brown.

The prepared mixture will make enough for 3-4 cakes. We stored the prepared mixture in a Ziploc in the fridge for a few days instead of making them all at once.

How the kids can help: measure & pour ingredients, press mixture into pan, inserting and removing pan from Easy Bake (Caution: pan will be very hot on removal! Ensure your child is using the long stick to insert and remove the pans. Otherwise, an adult should do it.)
