Since Chinese New Year is coming, I thought I would share with you one of our go-to stir fry recipes. It is from Today's Parent a couple of years ago - but I found it online here. We omit the oyster sauce - you could leave it out or replace it with a favourite like plum sauce.
Today's Parent Rainbow Stir Fried Rice
Ingredients
1tbsp oyster sauce
1tsp soy sauce
½tsp sesame oil
1tbsp vegetable oil
1 boneless, skinless chicken breast (½ lb/250 g), thinly sliced
1cup grated broccoli stalks (we shred and freeze ours to have handy for such an occasion)
1cup grated carrots
½cup chopped green onions (or green peas)
1 egg, beaten
3½cup chilled, cooked brown rice
Method:
In a small bowl, whisk together oyster sauce, one tbsp water, soy sauce and sesame oil to make sauce.
Heat oil in a large, non-stick frying pan at medium. Add chicken and cook until no longer pink – about 3 to 4 minutes. Transfer to a bowl and set aside.
In same pan at medium heat, stir-fry broccoli, carrots and green onions for 1 minute, make a well and add egg, covering as much of the pan as possible. Before egg sets add rice and sauce and stir-fry for 3 minutes, add chicken and cook another 1 minute or until heated through.
*1 cup brown rice yields 3½ cups cooked. To prevent sticking, the rice should be cooked and refrigerated prior to use (leftovers work great).
While I was hunting for the online version of this recipe, I did come across another one on TP that also looks promising: Stir Fried Rice. It has ketchup in it - one of Mario's favourite things, so who knows, maybe I'll try something new for Chinese New Year this year!
