Yumm-umm-my! Banana Bread - another recipe I put to use when trying to get food into my picky-breakfast eater. It is great for using up over-ripe bananas and healthy too! And, it's absolutely divine with peanut butter if I do say so myself :-)
Banana Bread
Ingredients:
1 tbsp lemon juice + skim milk to equal 1/2 c total
1 c. brown sugar
1/4 c. applesauce
1/4 c. low-fat mayo
2 eggs
4-5 mashed bananas (~1.5 cups)
1 tsp vanilla
1 c. whole wheat flour
1.5 c. white flour
1 tsp baking soda
1 tsp salt
1 c. Kashi/crunchy cereal
Method:
Combine milk & lemon juice. Set aside for ~ 5 min
Meanwhile, combine sugar with applesauce and mayo. Stir in eggs, blend well.
Add bananas, vanilla and milk mixture. Beat until smooth.
Add flours, soda & salt, stirring until just moistened.
Stir in cereal.
Bake in a greased 8X8 pan at 350 degrees for ~ 40-45 min.
How the Kids can help: put the bananas in a ziploc & squish them to a mashed consistency; measure &/or pour ingredients; grease pan
