Tasty Tuesday - Nan's Easy-as-can-be Cake

I made this quick recipe last Friday  - we needed something tropical for the first day off school, especially with the weather we've been having! It is one my Nan taught me to make years ago - I think it made the rounds back in the '80's... I have seen versions of it online, but this is how I remember it.

NAN'S EASY-AS-CAN-BE CAKE

Ingredients:

1 19oz can crushed pineapple or pineapple tidbits
1 19 - 28oz can apples (the pie filling kind)
1 box white cake mix
1 c. melted margarine
1 c. shredded coconut
1 c. silvered almonds

Method:

  • Layer all ingredients evenly in 9X13 pan in the order listed.
  • Put in oven @ 350 degrees for about 40 minutes (coconut on top will be golden brown and apple filling likely bubbling up around the edges).
  • DONE!
How the kids can help - measure and pour ingredients; dump ingredients in pan; help make sure the surface is even.
