Tasty Tuesday - One-pot Spaghetti & Meatballs with Mozzarella

This is a tweak of a recipe found here on Canadian Parents. I liked the idea of only having one pot to clean, and no pasta to drain. I replaced some ingredients but love the idea - simple and yummy?? SOLD! 

One Pot Spaghetti and Meatballs with Mozzarella

Serves 4

Ingredients
1 1/2 tsp minced garlic
1 can mushrooms
1 chopped onion
1 tbsp Italian seasoning
1/2 tsp salt

1 28-oz can diced tomatoes and juice
2 c. water
1/2 375g box whole wheat spaghetti

~20 leftover meatballs (or use PC Blue Menu Turkey meatballs)

2 tbsp balsamic vinegar
1 1/2 c. Mozzarella cheese, shredded
1/2 c low fat cheddar grated

Method:

  • Over medium-high heat, combine garlic, mushrooms, onion and seasonings in a skillet. Add a drop of olive oil if required. Stir and cook about 5 min or until onion has softened.
  • Stir in diced tomatoes with their juice, water and spaghetti (break it to fit easily in the pot). Bring to a boil.
  • Reduce heat, cover and simmer until pasta is tender - about 15 min. Add meatballs for last 5 minutes.
  • Add vinegar and cheeses. Stir until cheese is melted and meatballs are heated through. 
  • Done!
How the kids can help: measure and pour ingredients; break spaghetti; stir mixture in final step (older kids - careful!)

Now QUICK!!! I think I see the sun - go outside before it is gone (you are looking for a golden yellow orb in the sky.... may appear as a soft glow if partially hidden by clouds ;-)
